EARL GREY WHISKEY SOUR

2oz Rye

1oz Earl Grey Honey Syrup*

3/4oz Fresh lemon juice

one Egg White
Shake ingredients in a cocktail shaker without ice to emulsify. Add ice and shake vigorously. Float bitters on top for added aromatics. For a smoother version, serve on the rocks, as shown.

Steep 20 bags of Earl Grey Tea (or 1 cup loose leaf) in 1 liter of near-boiling water. Cover and simmer on low heat for 20 minutes. Discard bag/leaves.

Filter the tea concentrate using coffee filters. Pour-Over filters work great, as you can filter it directly into a mason jar and measure out the final liquid.

Add 3/4 cup of honey per cup of Earl Grey concentrate. The honey acts as a natural preservative, but be sure to refrigerate in an air-tight container to preserve its flavor.
