Earl Grey Whiskey Sour

Walk to the second floor of the Earl Smith Strand Theatre and step back in time. Silent films quietly flicker in the background. A pianist tickles the ivories. The bartender lights an orange rind aflame, the perfect garnish to one of the much-lauded signature cocktails at the Lumiere Lounge. Sink into a plush couch or join a friend at a café table. Late night or date night, it’s the perfect spot to unwind.

EARL GREY WHISKEY SOUR

  • 2oz Rye

  • 1oz Earl Grey Honey Syrup*

  • 3/4oz Fresh lemon juice

  • one Egg White

Shake ingredients in a cocktail shaker without ice to emulsify. Add ice and shake vigorously. Float bitters on top for added aromatics. For a smoother version, serve on the rocks, as shown.

*Earl Grey Honey Syrup

  1. Steep 20 bags of Earl Grey Tea (or 1 cup loose leaf) in 1 liter of near-boiling water. Cover and simmer on low heat for 20 minutes. Discard bag/leaves.

  2. Filter the tea concentrate using coffee filters. Pour-Over filters work great, as you can filter it directly into a mason jar and measure out the final liquid.

  3. Add 3/4 cup of honey per cup of Earl Grey concentrate. The honey acts as a natural preservative, but be sure to refrigerate in an air-tight container to preserve its flavor.
